Job summary

Bikini Island & Mountain Hotels is seeking an experienced F&B Manager for its Mallorca Es Trenc property. You will take overall responsibility for day-to-day F&B operations across all outlets, leading a 35+ strong team and collaborating closely with the Head Chef to deliver exceptional guest experiences.

You will manage staffing, budgets, forecasts and KPIs while ensuring Bikini service standards and NENI franchise guidelines are consistently applied.

Qualifications

• Previous experience leading large F&B teams in hotels, lifestyle venues or high-volume operations.
• Strong budgeting, forecasting, cost control and F&B KPI knowledge.
• Excellent organizational and planning skills.
• Hands-on mindset with big-picture vision.
• Proven ability to connect kitchen, service and hotel operations.

Responsibilities

• Take overall responsibility for day-to-day F&B operations across all areas.
• Lead and develop the F&B team of 35+ employees with supervisors and the Head Chef.
• Build a strong team structure by setting priorities and delegating responsibilities.
• Plan staffing, schedules, holidays and resources based on occupancy and forecasts.
• Ensure Bikini service standards and NENI franchise standards are followed.
• Coordinate menu implementation, quality, service and new F&B initiatives.
• Own the department budget, monitor costs and identify profitability opportunities.
• Work with Purchasing and the Head Chef on stock management and cost control.
• Oversee events, weddings, groups and special F&B activations to ensure guest satisfaction.
• Collaborate with Front Office, Housekeeping and Hotel Management for smooth operations.
