Job summary

The Drake Hotel in Toronto is seeking a skilled Sushi Cook to join our kitchen team. You will prepare high-quality sushi, manage stock, and collaborate with the Sushi Chef to deliver authentic Japanese cuisine.

Ideal candidates have prior sushi-cook experience, strong knife skills, and the ability to work quickly during busy shifts, including weekends and evenings. Culinary-school certification is a plus, and we value hospitality and attention to detail.

Qualifications

  • Previous work experience as a Sushi Cook.
  • Good knowledge of sushi types and rolling techniques.
  • Ability to work fast and accurately.
  • Available to work during business hours, including weekends and evenings.
  • Flexibility to take on various shifts.
  • Certification from a culinary school is a plus.

Responsibilities

  • Preparing rich sushi menu items with various main ingredients and raw fish (for example, salmon, tuna, unagi)
  • Preparing all types of sushi, including maki, nigiri, and sashimi
  • Selecting fresh fruits and vegetables to make high-quality dishes (including avocado, mango, and carrots) from inventory
  • Adding additional flavors to sushi rolls with ginger, rice vinegar, wasabi, and soy sauce, when appropriate
  • Managing food prep activities, such as boiling rice
  • Coordinating with our BOH/Cook staff to ensure proper cooking, considering special requests and food allergies
  • Preparing appetizers, soups, and salads that are aligned with the philosophy of Japanese cuisine
  • Monitoring food stock and placing orders, as needed
  • Accountable for following proper company, food & health safety and sanitation protocols
  • Maintaining hygiene principles in all cooking areas and cleaning your space at the end of the shift

We are seeking a dynamic, passionate Sushi Cook. Responsibilities include handling a wide range of raw fish and other ingredients, managing food stock and working with an attention to detail to fulfill all orders within Drake high quality standards. Reporting to the Kitchen Management team, you will be working alongside the Sushi Chef. To be successful in this role, you should have experience with Japanese cuisine and be available to work during our opening hours. The role is committed to providing exceptional quality and service to our guests.
