Job summary

Dexterra Group is seeking an experienced Sushi Chef to ensure consistency in all food preparations for à la carte and buffet menus, with strong sushi rolling skills. You will train the team, uphold kitchen standards, and contribute to seasonal menu development while managing food costs.

Qualifications

  • Minimum of 5 years in the food service industry.
  • Sushi rolling experience required.
  • Ability to read, write, and communicate in English.
  • Excellent knife skills and experience with sashimi, nigiri, and vegetable prep.
  • Valid food handler’s license with knowledge of food safety regulations.
  • Ability to stand for long periods and work under pressure.
  • Demonstrates professionalism and alignment with company values.

Responsibilities

  • Prepare all food items for à la carte and buffet menus per recipes and standards.
  • Communicate effectively with the team and seek guest feedback.
  • Ensure kitchen staff adhere to standards and expectations.
  • Maintain and enhance food products through menu development and presentation.
  • Adhere to menu engineering and create seasonal menus as directed.
  • Control food costs through production efficiencies and waste reduction.
  • Complete daily temperature logs and manage FIFO of received goods.
  • Other duties as assigned

Job Description
  • Ensure the consistency in the preparation of all food items for àla carte and/or buffet menus according to property recipes and standards
  • Communicate effectively with the rest of the team and thrive for guest feedback
  • Ensure all kitchen colleagues are aware of standards & expectations
  • Maintain and enhance the food products through creative menu development and presentation
  • Adhere to menu engineering program and create seasonal and holiday menus according to hotel guidelines
  • Control outlet food cost, through menu engineering, production efficiencies, and food waste
  • Completes daily temperature log books and insures FIFO of all received goods.
  • Other duties as assigned
Qualifications
  • Minimum of 5years in the food service industry; sushi rolling experience required
  • Ability to read, write, and communicate in English
  • Excellent knife skills - experienced in cutting large fish for sashimi & nigiri and prepping vegetables for common sushi rolls & garnish
  • Valid food handler’s license, with sound knowledge of food safety regulations
  • The ability to stand for long periods of time
  • The ability to work under pressure with sound judgment
