Job Overview
We are currently seeking 1 permanent fulltime Sous Chef at Italian Kitchen at 860 Burrard Street, Vancouver BC
Job Overview: The position of sous chef comes with a great deal of responsibility. Reporting directly to the executive chef, the successful sous chef will quickly amass an in-depth familiarity with the kitchen’s operations so that they may fill in for the executive chef when needed and assist them in resolving any problems that may arise on the job.
Key Tasks
- Estimate amount and costs of supplies and food items
- Maintain records of food costs, consumption, sales and inventory
- Demonstrate new cooking techniques and new equipment to cooking staff
- Supervise activities of specialist chefs, chefs, cooks and other kitchen workers
- Create new recipes
- Instruct cooks in preparation, cooking, garnishing and presentation of food
- Prepare and cook complete meals and specialty foods for events such as banquets
- Supervise cooks and other kitchen staff
- Prepare and cook food on a regular basis, or for special guests or functions
- Prepare and cook meals or specialty foods
- Requisition food and kitchen supplies
- Arrange for equipment purchases and repairs
- Plan and direct food preparation and cooking activities of several restaurants
- Plan menus and ensure food meets quality standards
- Prepare dishes for customers with food allergies or intolerances
- Recruit and hire staff
- Train staff in preparation, cooking and handling of food
- Leading/instructing individuals
Key Requirements
- 3 years minimum experience in a similar position and environment
- Must be possess high knowledge and skill of preparing authentic Italian cuisine
- Proficient with Microsoft Office (Outlook, Word, Excel) and internet searches
- Must have a passion for the business and a love of food
- Excellent leadership and motivational skills
- Strong interpersonal and conflict resolution dexterity
- Ability to prioritize, organize and follow through as necessary
- A clear thinker with the aptitude to analyze and resolve problems, exercising good judgment
- Capacity to work well under pressure, meeting production schedules and timelines for service periods
- Ability to hold oneself and others accountable
Education/Certification
- Foodsafe certified (within 1 week of employment)
- Certification of culinary training or apprenticeship, Red Seal and journeyman certificate
- Completed Secondary school
