Job summary

Fairmont Hot Springs Resort is seeking a Sous Chef to support the Executive Chef in planning, directing, and evaluating food for restaurants and banquets in a busy resort setting. The role ensures customer service, safety, quality, and profitability are maintained.

Salary is $60,000.00 per annum. The candidate will lead kitchen operations, develop menus for events, and oversee daily production, with opportunities to influence cost control and guest satisfaction across the resort.

Qualifications

  • 5 years’ experience in a fast-paced kitchen environment.
  • In-depth skills and knowledge of all kitchen operations.
  • Strong leadership, communication, organization and relationship skills.
  • A true desire to exceed guest expectations in a fast-paced customer service environment.
  • Capable of producing a consistent product in a timely manner.

Responsibilities

  • Assist the Executive Chef in directing all culinary operations, including the preparation and production of all meals, food quality and presentation, compliance with safety and sanitation standards, team member productivity and performance, and cost control procedures to help profitability.
  • Help create and implement menu selections for special banquet themes and events with the Executive Chef and Food & Beverage Manager.
  • Coordinate, monitor and help execute all lodge functions as directed by the Executive Chef.
  • Assist in monitoring food production, ordering, quality and consistency daily.
  • Ensure compliance with health, safety, sanitation standards.
  • Assist in monitoring and developing team member performance including supervision, evaluations, training, scheduling.
  • Duties may evolve with the Food & Beverage Department operations; cooperate with other assignments.

Job description

Position Summary - The Sous Chef is a lead position that assists the Executive Chef withplanning, directing, and evaluating the purchase, production, presentation, andpricing of food for the Restaurants and Banquets. He/she ensures that the standardsof customer service, safety, quality and performance are maintained as directedby the Executive Chef.

Salary for this position is $60,000.00 per annum.

Major Duties & Responsibilities:

  • Assist theExecutive Chef in the direction and oversight of all culinary operations. Thisincludes the preparation and production of all meals, food quality andpresentation, compliance with all safety and sanitation standards, team memberproductivity and performance, as well as the implementation of resort policieswith regards to cost control procedures to help ensure profitability.
  • Help create andimplement menu selections for special banquet themes and events based oncurrent food trends and regional tastes in partnership with the Executive Chefand Food & Beverage Manager, as needed.
  • Coordinate,monitor and help execute all lodge functions as directed by the Executive Chef.
  • Assist inmonitoring food production, ordering, quality and consistency on a daily basis.
  • Ensure compliancewith federal, provincial and company health, safety, sanitation standards areattained.
  • Assist inmonitoring and developing team member performance to include, but not limitedto, providing supervision, assisting with evaluations, training, scheduling.
  • Duties andresponsibilities will evolve as you become more familiar with the Food &Beverage Department operations.
  • Co-operate and acceptother assignments as and when required.
