Job summary

Dexterra Group at Royal Roads University is seeking a Second Cook to support kitchen operations, maintain sanitation, and ensure quality. You will assist in sandwich prep, daily food production and uphold Food Safe standards.

We require a minimum of two years in a similar environment, FoodSafe Level I, and ability to work in a bustling team. WHMIS knowledge and HACCP familiarity are assets.

Qualifications

• Minimum 2 years of cooking experience in a similar or hotel/institutional environment.
• FoodSafe Level I certification or higher.
• WHMIS test score 80% or higher required.
• SafeCheck/HACCP certification is an asset.

Responsibilities

• Ensure consistent quality standards in food preparation and sanitation per Food Safe protocols.
• Prepare food items for sandwich making: bread, meats, cheese, fillings, garnishes.
• Visually inspect appearance of all cold foods for proper color and presentation.
• Check storage of all food items in refrigerators/freezers to maintain freshness.
• Prepare and set up a full salad bar for lunch and supper.
• Manage food stocks and utilization to minimize waste.
