Job summary

Dexterra Group is seeking a skilled Chef to oversee daily kitchen operations in a remote camp. Responsibilities include menu planning, food preparation, staff training, and adherence to Dexterra Food Safety protocols.

Qualifications

• Journeyperson or interprovincial Red Seal preferred.
• Valid Safe Food certificate required.
• At least 10 years’ experience in hospitality/food service as a Chef in hotels, resorts, or remote settings.
• Knowledge of computer programs (Microsoft Excel, Microsoft Word, Outlook).
• Extensive knowledge of menu costing, recipe cards implementation and wage control.
• Strong leadership and people skills.
• Must pass Criminal Background Check.
• Ability to perform physical tasks as described.

Responsibilities

• Supervise all kitchen staff and ensure compliance with Dexterra policies, health, safety and quality.
• Lead training, development, and mentoring of employees.
• Ensure foods prepared using FOODSAFE and HACCP methods per Dexterra guidelines.
• Manage labor and chemical resources efficiently.
• Serve clients and staff professionally.
• Plan menus considering dietary restrictions and restrictions.
• Conduct bi-weekly inventory.
