Job summary

CMH Heli-Skiing & Summer Adventures in Nakusp, British Columbia, seeks a Head Chef for The Lodge at Arrow Lakes to supervise the culinary team and deliver high-quality meals for the Tavern and heli-ski operations. The ideal candidate holds a Red Seal or equivalent, with 3-5 years of culinary management, and 2+ years in menu planning.

You will oversee creative menus, food preparation, and quality control while collaborating with management to drive success.

Qualifications

• Culinary diploma or certificate required.
• Red Seal Chef certification required or equivalent.
• Food Safe Certification required.
• 3-5 years of culinary management experience.
• 2+ years’ experience in menu planning and execution.

Responsibilities

• Manage day-to-day operations of the kitchen staff including hiring, training, evaluating and scheduling.
• Oversee all stages of food handling to ensure quality and cleanliness.
• Plan and facilitate meetings to coordinate menus with the culinary team.
• Enforce policies and procedures, OH standards, and safe food handling practices.
• Complete food orders, inventory controls and food rotations.
• Manage food inventories and food costing on menu items.
• Plan creative, seasonal menus using fresh, local ingredients and conduct menu costing.
• Respond to guest requests and food restrictions in an attentive and accommodating manner.
• Maintain a professional manner, appearance, and work area.
• Work with front-of-house staff to provide exceptional guest experiences.
• Support CMH health and safety and sustainability initiatives.
• Train and provide support during emergency response situations.
• Support guests and employees during field program area visits.
