Job Description

Position : 2nd Cook

Point of Hire Location : Terrace, BC

Rotation : 28 days in / 14 days out

Wage : $23.00 per hour

Scope :

The 2nd Cook will accurately and efficiently prepare, portion, cook, and present a variety of hot and/or cold food items for various meal periods, including breakfast, lunch, dinner, and special/catered events. Responsibilities include those listed below, as well as other tasks delegated by the 1st Cooks, Sous Chefs, and Executive Chef.

Primary Responsibilities :
  1. Comply with all Sodexo HACCP policies and procedures.
  2. Use HACCP handheld thermometers and implement corrective actions for out-of-range results.
  3. Ensure all production and HACCP data points are collected.
  4. Understand stock rotation methods, including FIFO, and write clear product labels.
  5. Operate kitchen equipment such as ovens, fryers, food processors, mixers, steamers, and tilt skillets to prepare food.
  6. Perform cooking duties independently or with minimal supervision.
  7. Prepare fruits, vegetables, meat, poultry, or fish for culinary use.
  8. Create small to large batch dishes using classical and contemporary techniques.
  9. Provide high-quality service to customers.
  10. Multitask with various priorities efficiently.
  11. Clean and sanitize workstations and equipment per guidelines.
  12. Maintain safety by proper lifting and using mechanical aids.
  13. Submit accurate label requests, focusing on ingredients and allergy signage.
  14. Follow safety and risk management policies, report accidents, and attend training.
  15. Maintain professional appearance and adhere to grooming and dress codes.
  16. Attend scheduled shifts and adhere to site travel policies.
Qualifications :
  1. Interprovincial ‘Red Seal’ or equivalent certification, with a minimum of 10 years’ experience in high-volume settings.
  2. Ability to train, supervise, and schedule staff with supervisory experience.
  3. Proficiency in Microsoft Office and basic baking knowledge.
  4. Experience with advanced kitchen management and HACCP food safety processes.
  5. Willingness to work day or night shifts and pass a drug and alcohol test.
  6. Personal integrity, appearance, demeanor, and ability to work in a multicultural environment.
  7. Adherence to Sodexo’s anti-bullying and harassment policies.
Additional Qualifications :
  1. At least 5 years’ cooking experience in high-volume environments like camps, hotels, or institutional settings.
  2. Strong communication and interpersonal skills.
  3. Good attendance and performance record.
  4. Valid Food Safety certification or provincial equivalent.
  5. Ability to stand for long periods and work flexible shifts.
  6. Effective English communication skills.
