The Tandoori and Indo-Chinese Cook at SRI AANDAVAR BAVAN will lead daily preparation and cooking of authentic tandoori and Indo-Chinese dishes, ensuring consistent quality, taste, and presentation. You will work closely with the Head Cook to execute the menu, uphold kitchen standards, and support efficient operations in a busy kitchen.

The ideal candidate has extensive experience in tandoori and Indo-Chinese techniques, a passion for these cuisines, and thrives in a fast-paced environment.

Qualifications

• Extensive experience in tandoori cooking techniques.
• Extensive experience in Indo-Chinese cooking techniques.
• Ability to thrive in a fast-paced kitchen environment.
• Collaborates with Head Cook to execute the menu and maintain standards.

Responsibilities

• Run the tandoor: manage heat and cook to spec.
• Bake naan/roti consistently; monitor proofing and doneness.
• Prepare marinades; skewering and timing of cooks.
• Cook North-Indian gravies and staple curries.
• Execute Indo-Chinese mains (Hakka noodles, fried rice, chili paneer).
• Perform high-heat wok cooking with proper toss technique.
• Maintain mise-en-place and portion control.
• Uphold HACCP/allergen rules and hygiene logs.
• Manage stock and assist with ordering.
