Job summary

Dhaba at the Mill in Kyneton, Victoria, is seeking an experienced Chef (Tandoor & Curry) for a full-time role. You will lead tandoor cooking, curries, breads, and work closely with the kitchen team to deliver authentic Indian cuisine.

The position offers you the chance to manage ovens, oversee food preparation, uphold safety standards and contribute to menu refinement. A stable full-time role with Australian workplace entitlements is provided.

Qualifications

• Minimum 3 years of relevant employment experience as a Chef, specialising in Indian tandoor and curry preparation in a commercial restaurant.
• Demonstrated practical expertise in operating tandoor ovens and preparing traditional tandoori dishes, kebabs and Indian breads.
• Strong knowledge of Indian curries, gravies, marinades, spice combinations and traditional cooking techniques.
• Experience in food preparation, menu planning, stock management, portion control and maintaining consistent food quality.

Responsibilities

• Prepare, cook and present a range of authentic Indian tandoor and curry dishes in accordance with established recipes and quality standards.
• Operate and manage tandoor ovens to prepare breads, kebabs, tandoori meats and other tandoor-based dishes.
• Estimate food requirements and assist with ordering, receiving and inspecting ingredients and kitchen supplies; monitor stock levels and wastage.
• Maintain quality, taste, presentation and consistency of dishes; supervise and train junior staff; ensure food safety and hygiene standards.
• Collaborate with kitchen and service teams to maintain operational efficiency and food quality.
