Job summary

Choice Sushi in Sydney is seeking a skilled Sushi CDP to shine in a fast-paced kitchen. You will work with the Head Chef and Sous Chef to prepare and present sushi with precision, keeping the sushi train stocked and handling orders efficiently while maintaining high standards of quality and presentation.

Beyond service, you will manage inventory, prep ingredients, monitor equipment, and maintain quality records.

• You have excellent knife skills and a solid understanding of sushi techniques.

Responsibilities

• Prepare and present sushi with precision and flair on the sushi train.
• Keep the train stocked with fresh, well-presented plates during service.
• Coordinate with kitchen and floor teams to maintain smooth service.
• Manage inventory, place orders, and prep ingredients (slice, marinate, fry, boil).
• Monitor equipment and maintain food quality records (rice pH).
• Train and mentor kitchen hands to build leadership skills.
