Job summary

Bar Carolina in South Yarra, Melbourne, seeks a skilled Sous Chef and Junior Sous Chef to join its Italian icon led by Karen Martini. You will work across a multi-space venue including a one hat restaurant, bar and private events, in a team focused on quality and consistency.

Candidates should have proven Italian cuisine experience, wood-fire grill skills, passion for local produce, and the ability to work autonomously while taking direction.

Qualifications

• Proven experience in Italian cuisine and experience with a wood-fire grill.
• Interest in local providores and farmers.
• Passion for Italian cooking culture.
• Ability to work as part of a small team.
• High standards in quality, consistency and presentation.
• Ability to take direction and also work autonomously.
• Flexibility to work weekends and public holidays.

Responsibilities

• Pack and organise stock, including FIFO.
• Prepare and serve a variety of high quality ingredients and dishes following standard recipes.
• Demonstrate skills to butcher a variety of seafood and meats.
• Work in a clean, safe and hygienic manner, following SOPs.
• Ensure all health regulations are adhered to during cooking, serving and storage.
• Demonstrate knowledge of seasonality, produce and processing methods.
