Stamford Plaza Sydney Airport is seeking a talented Sous Chef to join our Kitchen Team. You will work closely with the Head Chef, leading the kitchen brigade, delivering high-quality dishes across La Boca Restaurant & Bar, banquets, Room Service and other outlets.

This hands-on role focuses on food quality, presentation, consistency, and cost control while ensuring top hygiene standards and a safe kitchen environment. Experience with charcoal or wood-fire cooking is highly regarded.

Stamford Plaza Sydney Airport is currently seeking a talented and passionate Sous Chef to join our Kitchen Team.

The Role

An exciting opportunity has arisen for an experienced and enthusiastic Sous Chef to join our dynamic Kitchen Team.

Working closely with the Head Chef and the team, you will assist in leading the kitchen brigade and supporting the day-to-day operation of multiple food outlets, including La Boca Restaurant & Bar, banquets, Room Service and other food and beverage operations.

This is a hands-on leadership role requiring a strong focus on food quality, presentation, consistency, team development and operational efficiency, while maintaining appropriate food cost controls and the highest standards of food safety and hygiene.

Key Responsibilities

• Assist the Head Chef with the day-to-day management of kitchen operations across multiple outlets.
• Lead, train, coach and support the kitchen brigade to maintain a well-organised and motivated team.
• Prepare, cook and present high-quality dishes in accordance with Stamford standards and recipe specifications.
• Ensure consistent food quality, presentation and portion standards across all areas of production.
• Support food preparation and service across La Boca Restaurant & Bar, including cooking over charcoal and open-fire grills, as well as banquets, Room Service and other outlets.
• Assist with food cost controls, stock management, food rotation and minimising food waste.
• Contribute to menu development and creation as required.
• Support the efficient preparation and delivery of banquet and function operations.
• Work hands-on across different kitchen sections and areas of production as operationally required.
• Monitor kitchen operations during service and support the team to ensure smooth and efficient service delivery.
• Support the training, assessment and ongoing development of kitchen team members.
• Strong knowledge of HACCP principles, with proven experience implementing and maintaining HACCP standards in a professional kitchen environment.
• Ensure food safety, hygiene, HACCP and workplace health and safety requirements are consistently followed.
• Maintain a clean, organised and safe kitchen environment.

About you

To be successful in this role, you will be an experienced and passionate culinary professional who enjoys leading from the kitchen floor and working in a fast-paced hotel environment.

You will also possess:

• Certificate IV in Kitchen Management, Certificate IV in Commercial Cookery or an equivalent relevant qualification.
• Previous experience as a Sous Chef or in a similar senior kitchen role within a hotel, restaurant or high-volume hospitality environment.
• Strong leadership skills with the ability to train, motivate and support a kitchen brigade.
• Experience cooking using charcoal, wood-fire or open-fire grills.
• Experience with Argentinian or South American cuisine is highly regarded.
• Sound knowledge of food cost control, stock management and waste minimisation.
• Strong understanding of food safety, hygiene, WHS procedures and HACCP requirements.
• Excellent food preparation, cooking and presentation skills.
• Strong organisational and time-management skills with the ability to perform effectively under pressure.
• Excellent communication and teamwork skills.
• A hands-on and proactive approach to kitchen operations.
• Flexibility to work across different kitchen sections and outlets as required.
• Flexibility to work a rotating roster, including early mornings, evenings, weekends and public holidays.
