RAH DINING in Melbourne is recruiting a Sous Chef to help build the kitchen from the ground up for a Silk Road-inspired degustation and à la carte menu, opening in November. You’ll be in the room during final menu shaping, ordering, and supplier selection, working closely with the Head Chef to shape the kitchen's direction.

The role requires 2+ years as a Sous Chef or a strong Senior CDP, comfort with dietary adaptations, and full working rights in Australia.

Qualifikationen

• 2+ years as a Sous Chef or senior CDP ready to step up.
• Experience managing dietary and allergen adaptations across a full tasting menu.
• Current Food Safety Supervisor certificate or willingness to obtain one.

Aufgaben

• Run service in Head Chef's absence and maintain pass standards.
• Own ordering, stock rotation and food cost against budget.
• Drive R&D: bring dishes to the table, not just execute them.
• Own food safety, HACCP records, allergen control and kitchen compliance.
• Collaborate with front of house on pairings, dietaries and pacing.
