Rainbow Town Braeside is seeking an experienced Restaurant Manager to lead our BBQ buffet dining team in Braeside, Melbourne. You will drive service standards, training, and on-floor leadership to ensure guest satisfaction and smooth operations.
Join a hands-on role where you design procedures, coordinate kitchen and service, manage reservations and safety, and mentor staff across Chinese and English-speaking teams.
Rainbow Town Braeside is an indoor family entertainment venue in Braeside, Melbourne. Our BBQ buffet restaurant is an integral part of the venue, and our ambition is to build a professionally run restaurant known for consistent food quality, attentive service, excellent hygiene and a welcoming dining experience.
We are looking for an experienced, hands-on Restaurant Manager who can turn that ambition into clear operating standards, a well-trained team and consistently strong service.
You will lead daily restaurant operations, work closely with the kitchen and venue management, and take ownership of service quality, team performance and operational discipline. You should be comfortable leading on the floor during busy services and building the systems that help the team perform consistently.
Develop, implement and maintain practical operating procedures for opening, closing, service preparation, table presentation, cleaning and shift handovers.
Set clear service standards for welcoming guests, explaining the BBQ buffet experience, taking orders, clearing tables and resetting the dining area.
Plan staffing and service flow around bookings, expected demand, group dining and peak trading periods; lead pre-service briefings and post-service reviews.
Work with the kitchen team to maintain consistent food presentation, product availability, freshness and timely buffet replenishment.
Monitor buffet conditions throughout service, coordinate replenishment quantities with demand, and minimise waste without compromising quality or food safety.
Train staff to explain BBQ equipment use and dining procedures clearly, assist guests appropriately, and follow safe grill handling and cleaning procedures.
Check the condition of dining equipment and grills; report faults promptly and coordinate maintenance with management and qualified contractors.
Manage reservations, seating, queues and table turnover while maintaining attentive, professional service.
Handle enquiries, special requests and complaints calmly; follow up on feedback and implement practical improvements.
Coordinate family dining, parties and group bookings with the wider venue team so that restaurant service remains organised.
Support recruitment and onboarding, prepare rosters, allocate duties and coach staff during service.
Build structured training in service etiquette, menu knowledge, buffet procedures, hygiene, allergen communication and complaint handling.
Set clear performance expectations, provide regular feedback and develop capable shift leaders.
Communicate effectively in Chinese and English across kitchen staff, management, the service team and guests.
Implement and monitor food safety procedures covering temperature checks, storage, stock rotation, raw and cooked food separation, and prevention of cross-contamination.
Ensure allergen enquiries are checked with the kitchen and communicated accurately; train staff to avoid making unsupported assurances.
Maintain cleaning schedules, hygiene checks and relevant operational records, with particular attention to buffet areas, utensils, grills and guest touchpoints.
Monitor hazards, respond to incidents and elevate equipment or safety concerns promptly.
Monitor sales, labour costs, food waste and stock usage against agreed targets, working with management and the kitchen on improvements.
Oversee stocktakes, ordering and delivery checks, and communicate product quality or supply issues to suppliers and management.
Maintain accurate POS, cash-handling, reconciliation and shift-reporting procedures.
Report on guest feedback, service issues, team performance and operating results, with clear actions to improve the restaurant.
Proven restaurant management experience and the ability to independently lead busy services and manage a team.
Practical experience establishing or improving operating procedures, training staff, rostering and controlling stock and costs.
Strong attention to service quality, cleanliness, food safety and detail.
Effective spoken Chinese and English are essential. Daily duties require communication with Chinese-speaking kitchen staff, management and guests, as well as English-speaking colleagues and guests, to coordinate service, explain operating and safety procedures, and resolve enquiries.
A calm, accountable and hands-on leadership style, with strong organisation and problem-solving skills.
Availability for a roster including evenings, weekends, public holidays and school holiday periods.
Valid working rights in Australia.
Applicants of all backgrounds who meet the language, experience and role requirements are welcome.
Management experience in BBQ, buffet or high-volume restaurants.
Experience establishing restaurant service standards or improving an existing operation.
Relevant hospitality management or food safety qualifications.
A full-time management role with the opportunity to help build a professional BBQ buffet restaurant within Rainbow Town Braeside.
The opportunity to shape service standards, develop your team and make a visible impact on the guest experience.
