Johnny Vince & Sam’s is seeking a Restaurant Manager for their lively Lygon Street venue. You will lead day-to-day operations, run the floor during services, and develop the front-of-house team to ensure guests leave happier than they arrived.
You’ll oversee rosters, recruitment, training and performance conversations, while collaborating with the kitchen to keep service smooth from booking to last espresso. A passion for hospitality and hosting shines here.
Johnny, Vince & Sam’s Ristorante celebrates the fun, energy and nostalgia of the Italian-Australian experience on Lygon Street. Inspired by the suburban homes of the 1970s and 80s, the restaurant feels like stepping into Nonna’s living room. It’s lively, welcoming and a little bit cheeky. Our guests come for generous plates of simple, comforting Italian food that blends tradition with playful creativity, and they stay for the warmth, the service and the sense of humour that come with it. Behind the scenes we’re a close-knit team that values community, authenticity and having a good time doing great work.
We’re looking for a Restaurant Manager to lead the venue day to day and make sure every guest leaves happier than they arrived. You’ll run the floor during busy services, lead and develop the front-of-house team, and work closely with the kitchen so service runs smoothly from the first booking to the last espresso. Your responsibilities will include rosters, recruitment, training and performance conversations, as well as managing reservations, events and peak periods. You’ll handle guest feedback with care and confidence, maintain operating procedures and service standards, and keep the venue clean, safe and compliant with food safety and liquor licensing requirements. You’ll also work with the leadership team on revenue, labour and cost targets. Most importantly, you’ll set the tone, building a positive and inclusive culture where the team feels supported and guests feel like family.
You’re a natural host with genuine warmth and energy, the kind of person who lifts the room and leads by example on the floor. You lead collaboratively rather than from behind a desk, and you get the best out of people by bringing them with you. You’re calm under pressure, organised, and you take pride in the details that turn a good night out into a memorable one.
You’ll be joining a much-loved Lygon Street venue backed by a passionate hospitality group, with a team that genuinely enjoys working together and real scope to put your stamp on the guest experience.
