Job summary

The Mulberry Group is opening High Road Bar & Grill in Novotel Brisbane South Bank, South Brisbane. The Restaurant & Bar Manager will lead the day-to-day operation of the venue, ensuring service excellence and a warm, premium guest experience.

You will manage both restaurant and bar teams, drive standards, training, and collaboration with kitchen and hospitality partners, while focusing on Australian produce, wines, and cocktails to build a lasting local hospitality destination.

Qualifications

• RSA certification is required to serve alcohol.
• RMLV license (or willingness to obtain) is required.
• Minimum 2 years leadership experience in premium restaurant/bar settings.
• Experience managing both restaurant and bar operations.
• Strong knowledge of premium food, Australian produce, and wines.
• Knowledge of beer, spirits and premium cocktails.

Responsibilities

• Lead the daily operation of High Road Bar & Grill to deliver high-quality guest experiences.
• Be a visible, hands-on leader during service and support the team.
• Create an energetic, welcoming atmosphere reflecting the brand.
• Lead the Restaurant Supervisor and Bar Supervisor as one team with strong cross‑communication.
• Maintain service standards across all shifts.
• Maintain cleanliness, presentation, ambience and organisation throughout the venue.
• Develop food and beverage knowledge across the team, focusing on Australian produce and wines.
• Own commercial performance with the F&B Manager to hit revenue and profitability targets.
• Recruit, train and retain a strong restaurant and bar team.
• Be a genuine host ensuring every guest feels welcome.
