The Mulberry Group is launching High Road Bar and Grill at The Novotel Brisbane South Bank. We are seeking an outgoing and confident Bartender who loves talking to guests and creating a welcoming atmosphere.

You will mix great drinks, advise guests on cocktails and wines, and move between bar and floor to enhance the overall guest experience. Join a team focused on hospitality, personality and connection, delivering warm, unhurried service in a quality environment.

Qualifications

• Previous experience working as a bartender in a quality restaurant, bar or hotel.
• Strong cocktail knowledge and confidence working across a busy bar service.
• Good knowledge of spirits, wine and beer, plus non-alcoholic drinks.
• Experience engaging with guests and making recommendations.
• Current RSA certification is required.

Responsibilities

• Prepare the bar before service and own it throughout the shift.
• Deliver consistently well-made cocktails, wine, beer and non-alcoholic drinks.
• Manage multiple orders during busy service while maintaining quality and pace.
• Keep the bar clean, stocked and professionally presented.

Melbourne's The Mulberry Group are bringing their first Brisbane venue to life at The Novotel, South Brisbane.

High Road Bar and Grill is on Cordelia Street, South Brisbane, and it’s here to become part of the neighbourhood. The name says it simply: Take the High Road. It’s aspirational without being aloof, grounded in Queensland produce, serious grill craft, and the kind of warm, unhurried hospitality that turns a first visit into a habit.

About the role

High Road is a neighbourhood grill and bar built around Queensland produce, fire-led cooking and warm, unhurried hospitality. The Bartender brings that promise to the bar - creating great drinks, knowing the product and making every guest feel welcome. This is a hands-on role for an outgoing, warm and confident bartender who genuinely enjoys people and knows how to create energy around the bar. You will be comfortable starting conversations, building relationships with guests and making the bar feel like a place people want to return to.

The role goes beyond making drinks. During service, you will move between the bar and the floor, checking in with guests, talking about the drinks and food, recommending cocktails and wine, and confidently introducing guests to High Road's snacks and other offerings. You will be naturally curious about what guests are enjoying and look for genuine opportunities to enhance their experience.

You will know your cocktails, spirits, wine and beer, work efficiently through a busy service, and understand that great bartending is about hospitality, personality and connection as much as it is about the drink in the glass.

Key responsibilities

• Prepare the bar before service and take ownership throughout the shift, from setup through to close
• Deliver consistently well-made cocktails, wine, beer, spirits and non-alcoholic drinks
• Work confidently through busy service, managing multiple orders while maintaining quality, accuracy and pace
• Keep the bar clean, organised, stocked and professionally presented throughout service
• Be visible, present and engaged with guests, spending time on the bar floor checking in with guests and starting conversations
• Talk confidently and enthusiastically about the High Road drinks and food offering and make natural recommendations
• Build relationships with regulars and recognise returning and VIP guests
• Welcome guests warmly and confidently and make guests feel comfortable, valued and looked after
• Have strong knowledge of cocktails, spirits, wine, beer and non-alcoholic drinks and understand allergens and dietary requirements
• Communicate clearly and respectfully with the restaurant team and wider Food & Beverage team

About you

• An understanding of cocktail preparation, presentation and consistency
• The ability to engage with guests and make natural, informed recommendations
• Experience working effectively as part of a busy Food & Beverage team
• Genuine interest in food, drinks and hospitality
• Current RSA certification
• Outgoing, warm and confident, with a genuine love of talking to people
• Calm, organised and focused during busy service
