Job summary

The Mulberry Group is opening High Road Bar & Grill in Novotel Brisbane South Bank, South Brisbane. The Restaurant & Bar Manager will lead the day-to-day operation of the venue, ensuring service excellence and a warm, premium guest experience.

You will manage both restaurant and bar teams, drive standards, training, and collaboration with kitchen and hospitality partners, while focusing on Australian produce, wines, and cocktails to build a lasting local hospitality destination.

Qualifications

• RSA certification is required to serve alcohol.
• RMLV license (or willingness to obtain) is required.
• Minimum 2 years leadership experience in premium restaurant/bar settings.
• Experience managing both restaurant and bar operations.
• Strong knowledge of premium food, Australian produce, and wines.
• Knowledge of beer, spirits and premium cocktails.

Responsibilities

• Lead the daily operation of High Road Bar & Grill to deliver high-quality guest experiences.

• Develop food and beverage knowledge across the team, focusing on Australian produce and wines.
• Own commercial performance with the F&B Manager to hit revenue and profitability targets.
• Recruit, train and retain a strong restaurant and bar team.
• Be a genuine host ensuring every guest feels welcome.

High Road Bar and Grill is on Cordelia Street, South Brisbane, and it’s here to become part of the neighbourhood. The name says it simply: Take the High Road. About the role

The Restaurant & Bar Manager is responsible for leading the day-to-day operation of High Road Bar & Grill, a premium Australian restaurant and cocktail bar located within Novotel Brisbane South Bank. This is a hands‑on leadership role for someone who enjoys being on the floor, knows how to create a great atmosphere and takes pride in delivering memorable food and beverage experiences. The Restaurant & Bar Manager leads both the restaurant and bar teams and is responsible for service standards, guest experience, team performance, financial results and the overall presentation and reputation of High Road Bar & Grill.

Key responsibilities

• Lead the daily operation of High Road Bar & Grill and ensure the restaurant and bar deliver a consistently high-quality guest experience
• Be a visible, hands‑on leader during service and support the team wherever required
• Create an energetic, welcoming and professional atmosphere that reflects the High Road Bar & Grill brand
• Lead the Restaurant Supervisor and Bar Supervisor as one team, ensuring strong communication between the restaurant, bar and kitchen
• Ensure service standards are consistently maintained across all shifts
• Maintain high standards of cleanliness, presentation, ambience and organisation throughout the restaurant and bar
• Develop strong food and beverage knowledge across the team, with a particular focus on Australian produce, Australian wines, premium spirits and cocktails
• Take ownership of the commercial performance of High Road Bar & Grill and work with the Food & Beverage Manager to achieve agreed revenue, labour, cost of goods and profitability targets
• Recruit, train, develop and retain a strong restaurant and bar team
• Be a genuine host and ensure every guest feels welcome at High Road Bar & Grill

About you

• Current Responsible Service of Alcohol (RSA) certification
• Valid RMLV, or willingness to obtain one
• A minimum of 2 years' leadership experience in a premium restaurant, bar or similar high-quality food and beverage venue
• Previous experience managing both restaurant and bar operations
• Strong knowledge of premium food, Australian produce and modern Australian cuisine
• Strong knowledge and genuine interest in Australian wines
• Good knowledge of beer, spirits and premium cocktails
• Experience managing, training and developing front‑of‑house teams
• Strong commercial awareness and an understanding of restaurant and bar financial performance
• A proven ability to create a positive and high‑performing team environment
