Job summary

The Mulberry Group is launching a Brisbane venue at The Novotel South Brisbane. We seek a Bar Supervisor to lead the High Road Bar, refine the cocktails list, coach staff, and drive guest experience while achieving strong commercial results.

You will collaborate with the Restaurant Manager to maintain beverage standards, manage stock, and ensure service speed and accuracy during peak periods. RSA certified candidates preferred.

Qualifications

• 1–2 years in a senior bartender or bar supervisor role in a quality venue.
• Strong hands‑on cocktail skills and experience developing elevated cocktail lists.
• Current RSA certification.
• Experience training bartenders and maintaining consistency during busy service.
• Understanding beverage costing, portion control, ordering and stock management.

Responsibilities

• Be a visible, hands‑on leader throughout service, setting the pace and supporting the team.
• Lead setup, service and close‑down and ensure the bar is clean, organised, stocked and ready for trade.
• Allocate duties, run pre‑service briefings and maintain strong communication with the restaurant and kitchen.
• Protect speed, accuracy, presentation and consistency during busy service without losing the High Road atmosphere.
• Ensure opening, closing, cleaning, cash handling and operational controls are completed accurately.
• Maintain recipes, specifications, measures, presentation and costing for every cocktail.
• Develop seasonal drinks and specials with the Restaurant & Bar Manager, testing each for guest appeal, service speed and profitability.
• Coach bartenders in recipes, technique, product knowledge, service, responsible alcohol service and safe work practices.
• Support beverage revenue, cost of goods and profitability targets.
• Manage ordering, par levels, rotation, stocktakes and storage so the right products are available.

Melbourne's The Mulberry Group are bringing their first Brisbane venue to life at The Novotel, South Brisbane.

The High Road Bar and Grill is on Cordelia Street, South Brisbane, and it’s here to become part of the neighbourhood. The name says it simply: Take the High Road. It’s aspirational without being aloof, grounded in Queensland produce, serious grill craft, and the kind of warm, unhurried hospitality that turns a first visit into a habit.

About the role

The Bar Supervisor leads the High Road bar during service and owns the day-to-day quality and consistency of its beverage program. This is a hands‑on role for someone who knows how to run a calm, organised bar, develop confident bartenders and create drinks that earn their place on the list. You will work closely with the Restaurant Manager to maintain and evolve the cocktail list, protect beverage standards and deliver strong commercial results. Success will be measured through drink quality, speed and consistency, team capability, guest feedback, beverage sales, costs, stock control and the condition of the bar.

• Support agreed beverage revenue, cost of goods and profitability targets
• Manage ordering, par levels, rotation, stocktakes and storage so the right products are available without unnecessary stockholding

About you

• At least one to two years' experience in a senior bartender or bar supervisory role in a quality venue
• Strong hands‑on cocktail skills and experience working with or developing elevated cocktail lists
• Good knowledge of spirits, wine, beer, non-alcoholic drinks and food pairings
• Experience training bartenders and maintaining consistency during busy service
• Understanding of beverage costing, portion control, ordering and stock management
• Current RSA certification
• Passionate about drinks and hospitality and proud of the details that create consistency
• Confident, hands‑on leader and patient trainer
• Calm, organised and decisive during busy service
• Flexible to work evenings, weekends and public holidays
