Job summary

Royal Sydney Golf Club in Rose Bay, NSW, invites applications for a dynamic Restaurant & Bar Manager to lead daily operations across the Restaurant, Casual Dining and Bar. You will drive exceptional member and guest experiences, mentor a team of up to 20 staff, manage menu offerings and wine service, and ensure pricing and cost controls meet Club standards.

The role is full-time with a flexible roster including weeknights and weekends.

Qualifications

• Experience as a Restaurant Manager in a 5 Star Hotel or Fine Dining setting.
• Ability to lead and develop up to 20 staff with strong service standards.
• Knowledge of wine pairings and guest wine service.

Royal Sydney is located in stunning Rose Bay and is fortunate to be considered one of Australia’s most prominent social and sporting institutions, having proudly hosted a number of world class sporting events including the Australian Open on 15 occasions and the 2011 Davis Cup. It is recognised nationally and internationally for its world class sporting facilities which include two golf courses, 18 tennis courts, bowling greens, croquet lawns, squash courts, snooker tables, a gym, swimming pools, cafes, club bar, a dining room, accommodation rooms and multiple function rooms.

The Role:

We are looking for a dynamic Restaurant & Bar Manager to lead and oversee the daily operations of the Restaurant, Casual Dining and Bar, ensuring exceptional service delivery, high-quality food & beverage experiences and seamless operational performance.

You will be responsible for driving team leadership, maintaining high service standards, and enhancing member and guest satisfaction while supporting the overall commercial and operational objectives of the Food & Beverage department.

This is a full-time role requiring availability to work a flexible roster including evenings during the week and on weekends.

Key Responsibilities:

• Ensure exceptional member and guest experiences are delivered and are of the highest quality in line with Club standards.
• Oversee daily operations across restaurant and bar, manage POS updates and maintain inventory.
• Identify and implement service improvements.
• Lead, mentor and train the team, ensuring effective staffing, scheduling, and strong performance levels, creating growth L&D opportunities.
• Collaborate on event promotions and menu offerings to drive revenue.
• Foster a culture of open communication, support and collaboration, ensuring alignment is reflective with Club Values.
• Responding efficiently and accurately to member complaints.
• Assist members and guests during the dinner service with wine recommendations and selection for perfect pairing with their dinner, decanting of the wine and wine service.
• Ensure the development of policies, standards and procedures for all aspects of the Restaurant, Casual Dining and Bar areas.

What We Need From You:

• Proven work experience as a Restaurant Manager working in a 5 Star Hotel or Fine Dining Restaurant.
• Strong experience in managing and leading a team of up to 20 staff.
• Culinary school Diploma or Degree in food service management or related field, or equivalent training course.
• Strong interpersonal communication skills, fostering strong relationships with members, staff and key stakeholders.
• Strong administration skills and working knowledge of computer software programs (MS Office, POS, Respak bookings software).
• Expertise in food and beverage pairings.
• Solid understanding of pricing, budgets and cost controls.
• A deep knowledge of wine and the ability to determine wine faults and maintain proper temperatures in order to showcase products at their maximum potential.
• Current NSW RSA and working rights in Australia.
