Lancemore Lindenderry Red Hill, situated on the Mornington Peninsula, seeks a Restaurant Manager to lead The Dining Room’s front-of-house team. You will deliver exceptional service, curate a warm, elegant experience and work closely with the kitchen to elevate dining.

The role requires leadership in a premium dining environment, strong wine knowledge, RSA certification, and a personable, professional service style. Join a boutique hotel renowned for award-winning hospitality.

Qualifications

• Experience leading front-of-house in fine dining or premium regional venues.
• RSA certificate is essential.
• Strong knowledge of premium Australian wines, esp. Mornington Peninsula.
• Service style: elegant, personal, and relaxed; not stuffy.

Responsibilities

• Lead daily operations of The Dining Room to deliver elevated service.
• Greet guests warmly and maintain genuine hospitality.
• Train, mentor and motivate front-of-house team for consistency.
• Collaborate with Head Chef on timing, menu knowledge, and seasonal offerings.
• Drive wine service and promote local wine program.
• Maintain cleanliness, presentation and service etiquette.
• Manage reservations and guest communications for a smooth dining experience.
• Monitor guest feedback and team culture, implementing improvements as needed.
• Ensure compliance with liquor licensing, RSA and food safety standards.
