Job summary

Nobu Sydney, part of Crown Resorts, seeks an inspiring Assistant Restaurant Manager to lead on the floor, coach a high-performing team and deliver the renowned Nobu experience. You will support the Restaurant Manager and drive exceptional guest service in a prestigious Sydney dining destination.

The role focuses on developing talent, optimizing service, and contributing to commercial performance while upholding Nobu’s standards of hospitality, quality and continuous improvement.

Qualifications

• Proven leadership experience within a premium, luxury or high-volume dining environment.
• A passion for hospitality and creating memorable guest experiences.
• Strong coaching and mentoring capabilities, with a focus on developing engaged, high-performing teams.
• Experience managing guest relations, service recovery and VIP experiences with professionalism and confidence.
• Commercial acumen across labour management, productivity and venue performance.
• Strong food, wine, sake and beverage knowledge.
• Experience with Japanese or Asian cuisine highly regarded.
• Hands-on leadership style with the ability to lead from the floor during peak service periods.
• Current NSW RSA Competency Card.

Responsibilities

• Lead front-of-house team to deliver exceptional service.
• Drive luxury service standards and create memorable dining experiences.
• Assist with roster management, labour optimisation and operational planning.
• Manage guest feedback and resolve service issues professionally.
• Assist with financial performance, stock control and cost management.
• Ensure compliance with SOPs, service standards and food safety requirements.
• Lead from the floor and support service delivery during peak trading periods.
• Act as venue leader in the Restaurant Manager's absence.
