Job summary

AC by Marriott Gold Coast is seeking a Commis Chef for the Rivo Restaurant as part of a pre-opening team. You will assist our culinary crew with preparation, cooking and plating while integrating into a high-profile hotel kitchen environment.

You’ll work alongside Demi Chefs and senior culinary leaders, gaining hands-on experience and contributing to building kitchen standards from day one. Part-time roster includes evenings, weekends and holidays.

Qualifications

• Recognised Commercial Cookery qualification or equivalent chef qualification.
• Previous commercial kitchen or hospitality experience is advantageous.
• Current Food Safety Certificate.

Responsibilities

• Prepare, cooking and presenting dishes in line with recipes and quality standards.
• Support daily mise en place and ensure ingredients are prepared, portioned and stored correctly.
• Prepare both hot and cold food items as required.
• Monitor food quality, freshness and presentation throughout preparation and service.
• Maintain accurate food logs and follow required food safety procedures.
• Safely operate ovens, grills and other kitchen equipment under the guidance of senior chefs.
• Maintain a clean, organised and well-stocked workstation.
• Communicate shortages, quality concerns or operational issues promptly.
• Work collaboratively with the culinary and Food & Beverage teams.
• Follow all food safety, hygiene, workplace health and safety, and Marriott International procedures.
• Take an active approach to learning and developing your culinary skills.
