Job summary

Accor's Mercure Melbourne Southbank is seeking a Part Time Commis Chef to join the kitchen team, primarily covering dinner service and contributing to memorable dining moments for guests.

You will prepare menu items with flair, manage stock and wastage, maintain clean work areas, and report issues to the Head Chef. The role offers hands-on experience in a dynamic hotel F&B operation within a renowned global hospitality group.

Qualifications

• Trade qualification in culinary and hotel/restaurant experience; dinner service required.
• Excellent technical knowledge with various cooking techniques.
• Exemplary communication skills.
• Excellent organisational skills.
• Maintain high and consistent standards.
• Knowledge of HACCP and food safety standards.

Responsibilities

• Prepare and present menu items within cost margins specified by the hotel.
• Ensure stock rotation and minimum wastage; implement stock control procedures.
• Keep all areas clean and tidy; wash dishes; ensure equipment is maintained and serviced.
