Job summary

Sofitel Brisbane Central, located in the heart of Brisbane, seeks an experienced Food and Beverage Manager to lead day-to-day operations across luxury outlets. You will drive service excellence, manage P&L, coach outlet leaders, and implement menu engineering to optimise profitability while upholding brand standards.

Qualifications

• 4–5 years' progressive Food and Beverage experience in a luxury hotel or high-volume, multi-outlet environment.
• At least 2 years in a senior leadership role.
• Strong financial and analytical capabilities including P&L management, budgeting and forecasting.
• Sound understanding of menu engineering and labour/productivity management strategies.
• Excellent communication and stakeholder management skills.

Responsibilities

• Oversee day-to-day operations of Sofitel Brisbane Central’s F&B outlets.
• Lead and support the F&B team, maintain Sofitel service standards and staff development.
• Collaborate with the Director of Food and Beverage to drive commercial success across outlets (Bistro Suzette, Cuvee, Privé, In Room Dining, Minibar).
• Own outlet performance against revenue, cost and profitability targets; implement corrective actions and cost-saving opportunities.
• Monitor KPIs (revenue, labour and food costs, gross margins) and conduct regular quality audits.
• Provide training and development for Outlet Managers and teams, with performance reviews.
