Job summary

SRG Hospitality's Aqua in Milsons Point, Sydney, is recruiting for an opening team of Senior Sous, Sous, Junior Sous and Chefs de Partie. You will build and lead the kitchen, own systems, food cost, rosters and HACCP, and play a key role in opening week in November 2026.

The roles demand experience in high-quality, hatted or high-volume settings, with the ability to train staff, develop menus, and maintain exceptional standards across evenings, weekends and public holidays. On-site role.

Qualifications

• Proven sous chef in a hatted/high-volume kitchen with strong food cost, ordering and rostering skills.
• Opening experience highly regarded.
• CDP or Junior Sous with leadership potential for progression.
• Cert III Commercial Cookery or equivalent

Responsibilities

• Lead the kitchen during Aqua opening, overseeing systems and numbers.
• Build the kitchen through menu design, prep systems and ordering rhythm.
• Coach the team and drive HACCP and food safety standards.
• Maintain high standards across evenings, weekends and holidays.
