Exclusive Collection is seeking a passionate Sous Chef to join The Pass at South Lodge, a Michelin-starred dining theatre renowned for innovation and precision. You will lead a talented kitchen brigade, mentor junior chefs, and contribute to evolving tasting menus that celebrate British ingredients.

You will drive service excellence, uphold the highest standards of food safety, and collaborate with a team of industry professionals dedicated to exceptional guest journeys.

Qualifications

• Experience as Sous Chef or Senior Chef de Partie in a high-end restaurant, hotel or Michelin-standard environment.
• Strong leadership and team management during busy services.
• Outstanding culinary ability with a creative mindset.

Responsibilities

• Support the Head Chef in leading day-to-day operations and uphold The Pass's exceptional reputation.
• Lead the brigade during service ensuring consistent execution and pace.
• Run the kitchen in the absence of senior leadership.
• Mentor and develop junior chefs and demi-chefs.
• Contribute to menu development and continuous refinement of dishes.
• Maintain top standards of food quality, presentation and hygiene.
