Exclusive Collection's South Lodge in the South East invites a talented Sous Chef to join a luxury, multi-restaurant kitchen with Rosette-standard standards and a commitment to sustainability. You will lead a skilled brigade, contribute to menus, and mentor junior chefs in a high-profile hospitality environment.

Qualifications

• Experience as a Sous Chef or Junior Sous Chef in high-end environments.
• Strong leadership and ability to run busy kitchen services.
• Excellent organisational and communication skills.
• Solid understanding of food safety, compliance and kitchen best practice.
• Ability to mentor others and develop culinary talent.
• Commitment to quality, consistency and continuous improvement.

Responsibilities

• Support the Head Chef in leading day-to-day operations and drive standards.
• Lead and coordinate the brigade during service for exceptional execution.
• Run the kitchen in the absence of senior leadership.
• Inspire and develop Chef de Parties, Demi Chefs and Commis Chefs.
• Contribute to menu development and ongoing refinement of dishes.
• Maintain the highest standards of food quality and presentation.
• Manage ordering, stock control, supplier relationships and waste reduction.
• Foster a positive, high-performance kitchen culture.
