Job summary

Good Nature Hotel in Melbourne is seeking an experienced Sous Chef to join our kitchen leadership team. This hands-on role supports the Head Chef, leads the kitchen team, and maintains high standards across busy service.

You’ll be organised, calm under pressure and able to drive service, stock control, and food safety. Flexible nights and weekends to cover peak periods and shifts are required.

Qualifications

• Experience as a Sous Chef or senior kitchen leader
• Strong leadership style
• Experience in fast-paced, high-volume kitchen
• Knowledge of food safety, allergen management and kitchen compliance
• Experience with stock control, stocktakes and kitchen administration

Responsibilities

• Support the Head Chef with day-to-day operation
• Lead, motivate and develop the kitchen team
• Run service and maintain consistency, speed and presentation
• Assist with stocktakes, ordering, stock rotation and wastage control
• Support rostering, kitchen administration and cost management
• Maintain strong food safety, hygiene and cleaning standards
• Assist with training, performance management and team communication
• Step into the Head Chef’s responsibilities when required
