Job summary

dnata catering leads Sydney's inflight catering operation, seeking a Sous Chef to guide a culinary team, supervise production, quality and safety to ensure flights depart on schedule.

You will manage complex meals, cost controls and menu development while upholding strict HACCP/OHS standards in a fast-paced environment. This full-time role offers competitive pay, parking, staff meals and career progression.

Qualifications

• Trade qualified Chef with 2+ years in high-volume production.
• Strong HACCP, food safety and OHS knowledge.
• Experience in airline catering or service-focused environments.
• Proven leadership and teamwork ability.
• Experience in HALAL production and equipment segregation practices.
• Cost-conscious with good communication and organisation.
• Proficient in Microsoft Office.
• Able to obtain clear National Police Check.
• Available for full-time (38 hours per week).
• 5 weeks annual leave and related benefits.

Responsibilities

• Organise and direct your area with adequate staffing.
• Order food and equipment daily to meet the production plan.
• Provide leadership and on-the-job training to staff.
• Oversee food production, packing and tray-set activities.
• Prepare complex meals to specifications.
• Monitor KPI compliance including recipe specifications.
• Control labour, food costs and shrinkage to budget.
• Contribute to menu development for customer presentations.
