Job summary

Pullman & Mercure King George Square in Brisbane is seeking a dedicated Junior Sous Chef to join our vibrant kitchen team. You will assist in leading a passionate crew across Goldfinch Restaurant and other F&B outlets, delivering exceptional culinary experiences each time.

You will supervise prep, cooking, and plating, ensuring timely service, high presentation standards, and adherence to dietary and allergy requirements.

Qualifications

• Culinary degree or relevant trade certification.
• Excellent organizational and time management abilities.
• Ability to lead, train, and manage a diverse kitchen team.
• Knowledge of food safety, sanitation, and health regulations.
• Ability to work flexible hours, including evenings, weekends, and holidays as needed.

Responsibilities

• Lead a passionate team to deliver exceptional culinary experiences.
• Support Goldfinch restaurant and other key areas of culinary as required.
• Supervise food preparation, cooking, and plating.
• Ensure timely service and coordination with front-of-house staff.
• Maintain high presentation standards and dietary/allergy accommodations.
• Monitor portion control and waste to maintain food costs.
• Assist in inventory management, ordering, and receiving of ingredients.
• Ensure compliance with budgetary guidelines and operational efficiency.
• Enforce food handling, storage, and sanitation practices.
• Ensure compliance with health and safety regulations.
• Oversee cleanliness and maintenance of kitchen equipment and workspaces.
