Job summary

Pullman & Mercure King George Square in Brisbane is seeking a passionate Junior Sous Chef to lead a dedicated kitchen team across Goldfinch Restaurant and adjacent outlets, delivering exceptional culinary experiences to guests.

Reporting to the Chef de Cuisine, you will supervise food preparation, coordinate with front-of-house, maintain high presentation standards, monitor portions and waste, and help with inventory, health and safety compliance, and budgeting.

Qualifications

• Culinary degree or relevant trade certification.
• Strong culinary skills with expertise in à la carte and banquet operations.
• Ability to lead, train, and manage a diverse kitchen team.
• Excellent organizational and time management abilities.
• Knowledge of food safety, sanitation, and health regulations.
• Ability to work flexible hours, including evenings, weekends and holidays as needed.

Responsibilities

• Lead a passionate kitchen team focused on Goldfinch restaurant and other culinary areas as required.
• Supervise food preparation, cooking, and plating.
• Ensure timely service and coordination with front-of-house staff.
• Maintain high presentation standards and dietary/allergy accommodations.
• Monitor portion control and waste to maintain food cost efficiency.
• Assist in inventory management, ordering, and receiving of ingredients.
• Ensure compliance with budgetary guidelines and operational efficiency.
• Enforce proper food handling, storage, and sanitation practices.
• Ensure compliance with health and safety regulations.
• Oversee cleanliness and maintenance of kitchen equipment and workspaces

Pullman & Mercure King George Square is a vibrant 438 room twin towered hotel which acts as a sanctuary for leisure and business travellersas well as a place to be with our external facing venues including Goldfinch Restaurant and Street Café, Sixteen Antlers Rooftop Bar as well as internal facing KG Sports Bar.

Located opposite King George Square, City Hall and ideally situated in the heart of Brisbane CBD the hotel has some of the largest conference spaces in Brisbane incorporating 2 ballrooms.

Reporting to the Chef de Cuisine the role of Junior Sous Chef will oversee the operation of all the F&B outlets as well as champion the guest and employee experience.Our kitchen brigade is responsible for providing exceptional food service, as well as providing friendly and knowledgeable service to all visitors.

Job Description
