Job summary

Astra, voco Gosford's rooftop restaurant, seeks a Head Chef to own the kitchen, menu and standards, and to lead the team in delivering Japanese-inspired fine dining with panoramic Central Coast views.

You will shape the menu, mentor staff, manage costs and collaborate with the Venue Manager to realize the Astra vision, backed by a global hotel brand and growth opportunities within the network.

Qualifications

• Proven experience as Head Chef or experienced Sous Chef in high-end or fine dining.
• Genuine capability in Japanese cuisine and technique and willingness to grow this skill.
• Leadership that builds teams, not just menus.

Responsibilities

• Lead the Astra kitchen team through every service from prep to pass.
• Own and evolve the Japanese-inspired menu season by season.
• Set the standard for consistency, presentation and quality on every plate.
• Manage food cost, ordering and supplier relationships.
• Train, mentor and build a kitchen team that people want to work in.
• Partner with Astra Venue Manager to bring the vision to life.
• Keep the kitchen safe and compliant — WHS, food safety and HACCP.
