Job summary

Kings Park Tavern, part of the Marlow Hotel Group, requires a capable Head Chef for our kitchen brigade. The hotel provides full facilities including Food, Beverage, Bottle shop, TAB, and VIP Gaming Lounge.

The successful candidate will lead the kitchen, train staff, and oversee menu planning, stock control, and compliance while delivering exceptional casual dining experiences. Certificate 3 in Commercial Cookery or equivalent is required; this is a permanent salary position with around 45 hours

Qualifications

• Certificate 3 in commercial cookery or equivalent.
• Strong leadership and communication skills.
• Ability to train and coach a kitchen team.
• Experience in managing stock, rosters and budgets.

Responsibilities

• Manage and train the kitchen brigade.
• Oversee stock ordering and rotation.
• Rostering and wage control within budgets.
• Ensure kitchen cleanliness and regulatory compliance.
• Plan menus and implement changes.
• Present menu items according to recipes.
• Compile weekly specials.
• Foster strong relationships between Kitchen and FOH teams.

The bistro operates seven days a week from, 11:00am to 9:00pm (Sunday to Thursday) 11:00am-9:30pm (Friday and Saturday)

Reporting directly to our Group Exec Chef and General manager,while receiving high levels of support, direction and coaching, you along with the current, high performing kitchen brigade will beresponsible for;

• Management & staff training ofkitchen brigade
• Stock Ordering and rotation
• Rostering and wage control within predetermined budgets
• Kitchen Cleanliness and compliance with regulations as required
• Menu planning and implementation
• Menu Item presentation accordingto recipe cards
• Compilation of the weekly specials
• Harboring an effective relationship between Kitchen and FOH teams

The successful candidate will require excellent communication skills, be well presented, understand the true meaning of great customer service and be willing to go that extra step to ensure our valued patrons enjoy their casual dining experience at the hotel.

You will have completed the Certificate 3in commercial cookery qualification or equivalent.

This is a permanent salary position (approx. 45 Hours p.w) andinvolves night and in particular weekend work including selected Public Holidays.
