Job summary

ISS Defence is seeking an experienced Head Chef to lead the kitchen operations at RAAF Base Pearce, Bullsbrook WA. You will oversee daily cooking, menu planning, staff mentoring and ensure high standards of food quality, safety and service in a Defence environment.

The role requires strong leadership, HACCP knowledge and excellent stakeholder communication to drive a cohesive, efficient and compliant kitchen team. A Defence context experience is highly regarded.

Qualifications

• Demonstrated experience as a Head Chef or senior chef within a commercial, institutional or high-volume kitchen environment.
• Certificate III in Commercial Cookery or higher, or equivalent culinary qualifications.
• Strong leadership and people management skills.
• Experience supervising, coaching and developing kitchen teams.
• Sound knowledge of food safety standards and HACCP principles.
• Strong organisational skills across stock control, ordering, cost management and kitchen operations.
• Excellent communication and stakeholder management skills.
• Ability to stay level-headed in a fast-paced environment.
• Reliable, flexible and team-oriented approach.

This is an exciting opportunity for an experienced culinary professional who is passionate about food, enjoys leading and developing people, and takes pride in delivering a consistently high standard of service.

As Head Chef, you will oversee the day-to-day operations of the kitchen, ensuring meals are prepared and presented to a high standard while meeting client requirements, dietary needs, food safety standards and operational expectations.

Key Responsibilities

As Head Chef, you will be responsible for:

• Leading and overseeing daily kitchen operations and food service delivery

About You

We're looking for someone who brings strong culinary experience along with the ability to lead and support a team.

You will ideally have:

• Demonstrated experience as a Head Chef or senior chef within a commercial, institutional or high-volume kitchen environment
• Certificate III in Commercial Cookery or higher, or equivalent relevant culinary qualifications
• Strong leadership and people management skills
• Experience supervising, coaching and developing kitchen teams
• Sound knowledge of food safety standards and HACCP principles
• Strong organisational skills across stock control, ordering, cost management and kitchen operations
• Excellent communication and stakeholder management skills
• The ability to remain level-headed and organised in a fast-paced operational environment
• A reliable, flexible and team-oriented approach
• A strong commitment to food quality, safety and customer service

Previous experience within Defence, facilities management or large-scale catering environments will be highly regarded.

Minimum Requirements

Due to the nature and location of the role, successful candidates must:

• Be an Australian Citizen to meet Defence clearance requirements
• Hold or be able to obtain a current National Police Check
• Be able to successfully complete required pre-employment medical screening, including Drug & Alcohol testing
• Be able to obtain and maintain the required Defence clearance
• Be available to work on-site at RAAF Base Pearce, Bullsbrook WA
