ISS Defence Roles at RAAF Edinburgh – Catering is seeking reliable, motivated catering professionals to support the Defence base at RAAF Edinburgh (SA). The Sous Chefs will assist the Head Chef, oversee kitchen operations, ensure HACCP compliance, and uphold high service standards in a fast-paced environment.

Current Police Check and ability to obtain medical clearance are required, with a preference for Defence or military experience. Competitive pay and on-site growth opportunities are offered.

Qualifications

• Current National Police Check (issued within the last 12 months).
• Ability to obtain a pre-employment medical clearance (including Drug & Alcohol testing).
• Certificate III in Commercial Cookery or above.
• Defence or military experience – highly desirable.
• Relevant trade qualifications (where applicable).

• Supervise food preparation, production, presentation, and menu implementation to meet quality standards.
• Maintain food safety, hygiene, and HACCP compliance across all kitchen activities.
• Control food costs through effective ordering, inventory management, menu costings, and stock storage practices.
• Lead and mentor kitchen team members while ensuring contractual and client requirements are met
• Support meal preparation, service, and kitchen operations, ensuring high-quality food and outstanding service

Available Positions

Sous Chefs–

• Assist the Head Chef in leading and managing kitchen operations to ensure efficient catering service delivery
• Supervise food preparation, production, presentation, and menu implementation to meet quality standards.
• Maintain food safety, hygiene, and HACCP compliance across all kitchen activities.
• Control food costs through effective ordering, inventory management, menu costings, and stock storage practices.
• Lead and mentor kitchen team members while ensuring contractual and client requirements are met
• Support meal preparation, service, and kitchen operations, ensuring high-quality food and outstanding service
• Minimum 2 years' experience as a Senior Chef in a large commercial kitchen
• Strong leadership skills with the ability to manage and motivate a kitchen team
• Proven ability to work under pressure and deliver high-quality outcomes in a fast-paced environment
• Strong knowledge of food safety, statutory compliance, and catering operations
• Excellent problem-solving, organisational, and prioritisation skills
