Job summary

Prologue Café in Melbourne CBD is seeking an experienced General Manager to lead our team, uphold exceptional hospitality, and drive daily operations in a busy brunch café known for specialty coffee and house-made pastries.

You will manage stock, ordering, rostering, recruitment for FOH and barista roles, provide coffee training, support marketing on Instagram, monitor labour costs, and foster a positive customer and staff environment.

Prologue Café is an independent, Asian-inspired brunch café in Melbourne CBD, known for our creative brunch dishes, specialty coffee, house‑made pastries, and warm hospitality.

As our business continues to grow, we are looking for an experienced and passionate General Manager to lead our team.

About the Role

We are looking for a hands‑on leader who can confidently manage daily café operations, maintain high service standards, and create a positive environment for both staff and customers.

Alongside leading daily service, your main responsibilities will include:

• Managing ordering, inventory, and regular stock checks.

• Organising staff rosters and recruiting FOH and barista team members.

• Providing coffee training and maintaining coffee quality.

• Creating and uploading daily Instagram Reels and supporting café marketing.

• Monitoring labour costs and improving operational efficiency.

• Maintaining excellent customer service and team performance.

What We’re Looking For

• Previous experience in café or restaurant management.

• Good knowledge of brunch food and specialty coffee.

• Excellent leadership, communication, and organisational skills.

• Experience in rostering, recruitment, and stock management.

• Confidence in coffee training and maintaining quality standards.
