Job summary

HOTA, Home of the Arts – Surfers Paradise QLD is seeking an experienced Food and Beverage Venues Manager to lead operations for The HOTA Café & Lawn Bar, The Exhibitionist Bar, and Palette Restaurant. You will drive revenue, optimise costs, and ensure a high‑quality guest experience in a dynamic arts precinct.

You will lead, coach, and develop a high‑performing team, manage rostering and compliance, and align dining offerings with programming and events to maximise commercial outcomes.

• Proven experience managing multi-outlet hospitality or food & beverage operations.
• Strong financial and commercial acumen, including budgeting and forecasting.
• Ability to lead, coach, and develop high-performing teams.
• Hands-on leadership style with focus on guest experience and commercial outcomes.
• Excellent stakeholder management and communication skills.

• Lead daily operations across Dining Outlets, ensuring smooth service delivery.

We are seeking an experienced Food and Beverage Venues Manager to lead the operations and performance of HOTA’s iconic Dining Outlets.

About the Opportunity

The Food and Beverage Venues Manager is responsible for the commercial success, strategic optimisation, and operational continuity of HOTA’s Dining Outlets, including The HOTA Café & Lawn Bar, The Exhibitionist Bar, and Three‑hatted Palette Restaurant.

This role oversees the operations across all outlets, ensuring strong financial performance, efficient service delivery, and a consistent, high‑quality guest experience that reflects HOTA’s brand and standards.

As a hands on and commercially focused leader, the position drives revenue growth, cost control, and operational excellence, while fostering a high‑performing team culture and delivering exceptional, memorable experiences for all guests.

What You’ll Be Responsible For

• Leading daily operations across all Dining Outlets, ensuring smooth, efficient service delivery
• Driving revenue initiatives, increasing average spend, and identifying opportunities to maximise profitable performance across Dining Outlets
• Aligning offerings with HOTA’s programming, exhibitions, and events to enhance the customer experience and commercial outcomes
• Managing rostering, labour costs, and cost of goods to meet financial targets
• Developing and delivering Culinary Arts led events and experiences
• Partnering closely with the Sales & Events team to convert and deliver functions
• Building strong relationships with internal and external stakeholders to grow bookings and visitation
• Leading, coaching, and developing a high‑performing team culture
• Maintaining a strong on‑floor presence and leading by example
• Ensuring compliance with all relevant food safety, OH&S, and liquor licensing requirements

• Proven experience managing multi‑outlet hospitality or food & beverage operations
• Strong financial and commercial acumen, including budgeting, forecasting, and cost control

• Demonstrated ability to lead, coach, and develop teams with a unified operating approach
• Strong stakeholder management and communication skills
• Demonstrated ability to manage complex administrative and operational workflows with accuracy and efficiency
• A hands‑on, proactive approach with the ability to adapt in a fast‑paced environment
