Job summary

HOTA, Home of the Arts – Surfers Paradise QLD is seeking an experienced Food and Beverage Venues Manager to lead operations for The HOTA Café & Lawn Bar, The Exhibitionist Bar, and Palette Restaurant. You will drive revenue, optimise costs, and ensure a high‑quality guest experience in a dynamic arts precinct.

You will lead, coach, and develop a high‑performing team, manage rostering and compliance, and align dining offerings with programming and events to maximise commercial outcomes.

Qualifications

• Proven experience managing multi-outlet hospitality or food & beverage operations.
• Strong financial and commercial acumen, including budgeting and forecasting.
• Ability to lead, coach, and develop high-performing teams.
• Hands-on leadership style with focus on guest experience and commercial outcomes.
• Excellent stakeholder management and communication skills.

Responsibilities

• Lead daily operations across Dining Outlets, ensuring smooth service delivery.
• Drive revenue initiatives, increase average spend, and maximise profitability.
• Align outlets with programming, exhibitions, and events to enhance experience.
• Manage rostering, labour costs, and cost of goods to meet targets.
• Develop culinary-led events and experiences and partner with Sales & Events.
• Build strong internal and external relationships to grow bookings and visitation.
• Coach and develop a high-performing team culture and lead by example.
• Maintain on-floor presence and ensure health, safety, and liquor compliance.
