Job summary

EVT’s Esplanade Hotel Fremantle by Rydges is seeking an experienced Assistant Outlets Manager to lead the hotel’s F&B outlets, including Atrium Garden Restaurant, Ball & Chain, Marine Lounge Bar, Poolside Bar, Minibar and Room Service. This hands-on role focuses on daily operations, guest experience and cost control.

You will supervise staff, manage rosters, support budgets, and drive revenue through upselling and promotions while complying with RSA, food safety and WHS requirements.

Qualifications

• Experience managing food & beverage outlets in a hotel or restaurant.
• Ability to lead a busy hospitality team while maintaining service standards.
• Proficient rostering, payroll, and labour cost control.
• Strong guest service and problem-solving skills.
• Knowledge of RSA, liquor licensing, food safety and WHS requirements.

Responsibilities

• Coordinate day-to-day operation of all F&B outlets and uphold service excellence.
• Lead outlet operations and act as Manager-on-Duty as required.
• Publish rosters, track payroll accuracy and optimize labour efficiency.
• Assist budgets, monitor COGS, wastage, and stock control.
• Drive revenue through upselling, promotions, and menu initiatives.
• Support beverage selection and supplier discussions.
• Recruit, onboard, train, and coach F&B team.
• Engage with guests and resolve service issues with follow-up.
• Ensure RSA, liquor licensing, food safety and WHS compliance.
• Collaborate with other departments for hotel events and activations.
