Job summary

EVT seeks an experienced Assistant Outlets Manager at Esplanade Hotel Fremantle by Rydges to lead multiple Food & Beverage outlets including Atrium Garden Restaurant, Ball & Chain, Marine Lounge Bar, Poolside Bar, Minibar and Room Service.

The role is hands-on, focusing on team performance, labour cost control, guest experience and compliance across outlets.

Qualifications

• Experience in Food & Beverage, restaurant or hotel outlet management or supervisory role.
• Ability to lead teams in a busy hospitality environment.
• Practical rostering, payroll, COGS, stock management and revenue knowledge.

About the Role:

Esplanade Hotel Fremantle by Rydges is seeking an experienced Assistant Outlets Manager to support the Outlets Manager in leading the hotel's Food & Beverage outlets: Atrium Garden Restaurant, Ball & Chain, Marine Lounge Bar, Poolside Bar, Minibar and Room Service.

This is a hands-on leadership role responsible for day-to-day operations, team performance, labour and cost control, guest experience and compliance across the outlets.

Key Responsibilities:

• Support the smooth operation of all Food & Beverage outlets and maintain consistent service standards.
• Lead daily outlet operations and act as Manager-on-Duty when required, including opening, closing and floor operations.
• Prepare and publish rosters, monitor payroll accuracy and manage labour efficiency in line with business levels.
• Support budgets and forecasts; monitor COGS, wastage, ordering, stocktakes and stock variance.
• Drive revenue and profitability through upselling, promotions, activations, menu engineering and other commercial initiatives.
• Support beverage menu development, supplier discussions and product selection.
• Support recruitment, onboarding, training, coaching and performance management of the Food & Beverage team.
• Engage with guests, resolve service issues and maintain effective service recovery and follow-up.
• Ensure compliance with RSA, liquor licensing, food safety, WHS, hygiene and environmental health requirements.
• Work closely with other hotel departments and support hotel-wide events, projects and activations.

About You:

• Demonstrated experience in Food & Beverage, restaurant or hotel outlet management or in a supervisory capacity.
• Proven ability to lead teams in a busy hospitality environment and maintain strong service standards.
• Practical experience with rostering, payroll or labour control, COGS, stock management and revenue performance.
• Strong guest service, communication, coaching and problem-solving skills.
• Sound working knowledge of RSA, liquor licensing, food safety and WHS requirements.
• A hands-on leadership style and flexible availability across mornings, evenings, weekends and public holidays.
