Job summary

Accor in Sydney Olympic Park is seeking a Director of Food & Beverage to lead Culinary, Conference & Events, and multiple brand outlets across three brands. You will work with the Executive Committee and General Manager to deliver exceptional F&B experiences in a dynamic, event-rich precinct.

This role demands strategic, long-term planning, cross-brand leadership, and a passion for guest-centric service, with a focus on driving revenue, quality, and compliance across all outlets.

Qualifications

• Proven F&B management experience in high-volume premium or luxury hotels across multiple outlets.
• Strategic leadership directing a multi-skilled team and multi-brand operations.
• Strong financial acumen including labour cost, P&L analysis and forecasting.
• Proven experience leading teams across brands with strong people skills.
• Excellent written and verbal communication; able to influence stakeholders.
• RSA certification and liquor licensing knowledge.

Responsibilities

• Oversee daily operation of Culinary, Conference & Events, Bacar, Boulevard Brasserie, Brewery Bar & Kitchen, and Room Service as a single integrated operation.
• Embed Brand Standards across the precinct; conduct self-audits and implement corrective actions.
• Coordinate with Sales & Marketing, Front Office, Housekeeping and other departments for seamless service.
• Analyse guest satisfaction data and implement action plans to improve scores and experience.
• Own financial performance across outlets; manage rosters, wage costs, and controllable costs to budget.
• Lead, develop and support F&B leaders; manage performance and provide guidance to Outlet Managers.
• Establish training programs aligned with Accor Brand and Service Standards and InterREACT.
• Maximise revenue by reviewing occupancy, rates, upselling, and promotions across channels.
• Ensure WHS, RSA and licensing compliance; ensure financial transactions and cash security follow policy.
