Job summary

Accor in Sydney Olympic Park is seeking a Director of Food & Beverage to lead Culinary, Conference & Events, Bacar, Boulevard Brasserie, Brewery Bar & Kitchen, and Room Service across three brands. You will partner with the Executive Committee and General Manager to deliver exceptional F&B experiences and align with Brand Standards.

This fast-paced role requires strategic planning, strong people leadership, and a passion for premium guest service, with a focus on elevating guest satisfaction

Qualifications

• Proven F&B management experience in a high-volume premium or luxury hotel.
• Ability to lead multi-branded teams and set strategic direction.
• Strong financial acumen with labour cost, P&L forecasting.
• Experience leading teams across brands.
• Excellent people management and communication skills.
• RSA certification and liquor licensing knowledge.
• Guest-first attitude and premium service mindset.

Responsibilities

• Oversee daily operation of Culinary, Conference & Events, and multiple outlets as a single integrated operation.
• Embed brand standards and conduct regular self-audits and implement corrective actions.
• Coordinate with Sales, Front Office, Housekeeping and other departments to ensure seamless service across the precinct.
• Analyse guest satisfaction data and implement action plans to improve scores, ratings, and overall experience.
• Lead and develop F&B leaders; manage performance and succession planning.
• Drive revenue by reviewing occupancy, rates, upselling, promotions, and walk-in conversions.
• Ensure compliance with WHS and licensing requirements and Accor InterREACT programme.
• Collaborate with Finance on cash handling and cost controls.
• Deliver personalised experiences for VIP and regular guests across channels.
