Job summary

Qualifications

• At least three years of full-time experience as a Cook in a commercial dine-in kitchen.
• Certificate III or IV in Commercial Cookery is welcome.
• Ability to prepare breakfast and lunch to recipes and portion sizes.
• Knowledge of food safety, temperature control and allergen handling.
• Able to work early starts, weekends and public holidays.

Responsibilities

• Check deliveries and prepped items for freshness and quality.
• Prepare, season and cook breakfast and lunch dishes to recipes and portion sizes.
• Set and monitor temperatures on grills, ovens and other cooking equipment.
• Plate meals with correct sauces, garnishes and sides so each dish leaves the pass looking the same.
• Cook for allergen and dietary requests, following kitchen procedures.
• Store food at safe temperatures, label and rotate stock on a first in, first out basis, and keep waste low.
• Fill in daily food safety records, including fridge temperatures and cleaning logs.
• Clean and sanitise benches, utensils and equipment during and after service.
• Work with the other cooks and front of house during rushes, and help train junior kitchen staff when needed.
