Job description

About Mitchelton
Mitchelton is one of Australia's best-loved wineries and a true escape in Victoria's Goulburn Valley, just 90 minutes from Melbourne. Our hotel has 58 luxury rooms, each designed as a quiet retreat with plush linens, warm textures and views over the vineyards and the Goulburn River. For guests who want more privacy, our Crescent Cabins each come with a private deck, perfect for watching the sunset as kangaroos, cockatoos and emus come out at dusk. Guests enjoy our stunning infinity pool, the Muse restaurant, Provedore café, cellar door, Day Spa and art gallery all on site, set within architecture and grounds people come back for.

The role
This is a highly sought-after position, and it hasn't come up since 2018. We're looking for an Estate Hotel Manager to lead the Mitchelton experience. Reporting to the Estate General Manager, you'll own the full accommodation business: the hotel, Crescent Cabins, front office, reservations, housekeeping and the Day Spa. You'll manage the Guest Relations and customer service team and the Housekeeping Manager directly, and you'll lead training across your departments. You'll be accountable for occupancy, rate and revenue, and for making sure every guest feels the Mitchelton difference from the moment they book to the moment they leave.

Key Accountabilities

Managing the Guest Relations and customer service team, setting the tone for warm, polished service at every touchpoint

Leading the Housekeeping Manager to hold the presentation standard across rooms, cabins and public areas

Leading and developing your Guest Experience, Reservations and Day Spa leads

Leading recruitment for the accommodation team, from shaping roles to selecting the right people

Making sure every new starter completes a full induction and role-specific training, and building ongoing training that lifts service standards

Owning occupancy, ADR and RevPAR for the hotel and cabins against budget, and setting rate strategy across seasons and channels

Bringing fresh marketing, package and promotion ideas to the Sales & Marketing team to drive bookings and repeat stays

Keeping a close eye on competitor properties, the regional market and hospitality trends, and turning what you learn into better rates, packages and guest experiences

Forecasting, budgeting and managing the departmental result, including labour and operating costs

Acting on reviews and feedback, and handling escalated guest issues with good judgement

Keeping inventory, rates and PMS data accurate, with sound night audit and billing processes

Planning refurbishment and capex for rooms and cabins

Keeping WHS, emergency procedures, certifications and guest privacy in good order

Working closely with Events, Sales, F&B and Wine Experience so guests get one seamless Mitchelton stay

About you

Proven experience managing an accommodation operation, ideally hotel plus self-contained product

Hands-on revenue management experience covering rate strategy, distribution and forecasting

Experience leading department managers and frontline teams, including recruiting and training staff

A creative, commercial mindset, with ideas for packages and promotions that fill rooms

A good read on what other properties are doing and where guest expectations are heading

Comfortable reading a departmental P&L and managing a budget

Working knowledge of PMS and channel systems (Protel well regarded)

Calm, visible leadership, a sharp eye for detail and polished presentation

Availability across weekends, public holidays and peak periods

Hospitality or tourism qualification, RSA and First Aid are desirable

What's on offer

An excellent salary package for the right candidate

A relocation incentive to help you make the move to Nagambie

Full-time, permanent senior leadership role

Staff discounts across dining, wine, accommodation, and spa

A beautiful place to work, with a team guided by our TOWER values: Teamwork, Ownership, Well-being, Engagement and Respect

Roles like this don't come up often. If you know how to run a property commercially and still care about the small details guests notice, we'd love to hear from you.
