Job summary

Mygration Pty Ltd invites an experienced Cook to join our Burleigh Heads kitchen. This wood-fired, seasonal menu embraces Middle Eastern flavours and vibrant sharing plates, with a strong focus on fresh, locally sourced ingredients in a dynamic open kitchen.

Key duties include quality checks on produce, cooking across dishes from scratch, maintaining temperatures, plating, and mentoring juniors while upholding HACCP standards.

Qualifications

  • Minimum 2 years’ experience as a Cook in a high-volume kitchen.
  • Formal qualification in Commercial Cookery (Cert III/IV).
  • Strong knowledge of food hygiene and HACCP principles.

Responsibilities

  • Inspect incoming produce and ingredients to meet freshness and quality standards.
  • Calibrate and monitor temperatures of wood-fired ovens and grills for consistent results.
  • Prepare and cook a variety of dishes from scratch, including flatbreads and slow-cooked meats.
  • Season, taste, and adjust dishes to balance flavours and the restaurant’s style.
  • Plate dishes with precision and garnish to enhance appearance and taste.
  • Store ingredients safely, label leftovers, and rotate stock to minimize waste.
  • Adapt recipes for dietary restrictions while preserving flavour and texture.
  • Assist with menu planning by suggesting seasonal specials and quantities.
  • Mentor junior kitchen staff on knife skills and food safety procedures.

About the Role

On behalf of our client – a modern, wood-fired kitchen celebrated for its seasonal produce, Middle Eastern-inspired flavours, and vibrant sharing plates – we are seeking an experienced Cook. You will join a passionate team that values sustainability, quality, and creativity in every dish. This is an opportunity to work with fresh, locally sourced ingredients in a dynamic, open-kitchen environment.

KEY DUTIES AND RESPONSIBILITIES
  • Inspect all incoming produce, meats, and pantry items to ensure they meet the kitchen’s high standards of freshness and quality; reject any substandard goods.
  • Calibrate and monitor temperatures of wood-fired ovens, grills, burners, and other cooking equipment to achieve consistent results for each dish.
  • Prepare and cook a variety of dishes from scratch, including house-made flatbreads, slow-cooked meats, vegetable-forward plates, and specialty sauces.
  • Season and taste food throughout the cooking process, adjusting herbs, spices, and marinades to balance flavours and honour the restaurant’s signature style.
  • Portion and plate finished dishes with precision, adding garnishes, drizzles, and finishing salts to enhance visual appeal and taste.
  • Store prepared ingredients and leftovers in temperature-controlled coolers and freezers, clearly labelling and rotating stock to minimize waste.
  • Adapt recipes and cooking methods to accommodate dietary restrictions (gluten-free, vegan, etc.) while preserving flavour and texture.
  • Assist with menu planning by suggesting seasonal specials and estimating ingredient quantities based on forecasted covers and supplier availability.
  • Mentor junior kitchen staff and apprentices on knife skills, cooking techniques, and food safety procedures.
SKILLS & EXPERIENCE:
  • Minimum 2 years’ experience as a Cook in a high-volume, à la carte kitchen (wood-fired or Middle Eastern cuisine highly regarded).
  • Formal qualification in Commercial Cookery (Certificate III/IV or equivalent).
  • Strong knowledge of food hygiene, HACCP principles, and safe temperature management.
  • Ability to work flexible hours, including evenings, weekends, and public holidays.
  • Reliable, collaborative, and able to thrive under pressure in a fast-paced environment.
