Job summary

MED Bar and Restaurant, part of Doma Hotels, seeks a Commis Chef to join a Mediterranean style kitchen in Canberra. You will assist in planning menus, order supplies, demonstrate techniques and uphold hygiene standards.

You will lead and mentor junior staff, ensure consistent quality and support other sections as needed. Apprentice positions may be considered for the right candidate.

Qualifications

• Flexibility to work varied hours including mornings, evenings, weekends and holidays.
• Team-focused attitude with ability to work independently.
• High attention to detail and quality in food preparation and presentation.
• Understanding of cost control, menu planning and food cost.
• High standards of personal appearance and hygiene.
• Understanding and adherence to hotel rules, health and safety policies.

Responsibilities

• Assist in planning menus and ordering ingredients.
• Demonstrate cooking techniques and advise on procedures.
• Explain and enforce hygiene regulations.

About the role

Working in a fun and lively environment the Commis Chef is responsible for, depending on the role;

• Assisting in planning menus and ordering food supplies
• Demonstrating techniques and advising on cooking procedures
• Explaining and enforcing hygiene regulations
• Lead, train, and mentor junior staff
• Consistency in product quality and presentation
• Planning menus and costing of food production
• Chef de Partie must be able to manage own section, and assist other sections
• Commis Chef position will support the above duties with the Chef De Partie
