Job summary

Rydges Sydney Airport is seeking an experienced Cocktail Bartender to join Cloud 9 Rooftop Bar. You will shake cocktails, deliver flair service, and engage guests with personality in an intimate rooftop setting with views of the airport runway and city skyline.

The role requires 1–2 years in a similar environment, strong beverage knowledge, and a team-player attitude. Flexibility to work early mornings, late nights, and shifts to suit airport traffic is essential.

Qualifications

• 1–2 years in a restaurant, hotel or bar environment.
• Experience making cocktails and beverage knowledge from classics to complex drinks.
• Personable and able to engage with guests in a busy setting.
• Strong communication, teamwork and attention to detail.

Responsibilities

• Maintain grooming and a clean, safe work environment per hotel standards.
• Deliver exceptional F&B service while following safety and hygiene procedures.
• Demonstrate product knowledge and accurate beverage preparation.
• Complete opening/closing and cashiering duties.
• Participate in training to improve service and product knowledge.
• Collaborate with team and support other outlets as needed.

About the Role We are looking for an experienced Cocktail Bartender to join the team at Rydges Sydney Airport, working at Cloud 9 Rooftop Bar. A passion for shaking cocktails and love of delivering service with flair and personality is a must.

Located on the hotel’s rooftop level, with access to an outdoor terrace, Cloud 9 Rooftop Bar offers guests spectacular views across the airport runway, Port Botany, and the Sydney city skyline.

Up here, you’ll discover an intimate setting with an impressive collection of wines, spirits, champagnes, and an assortment of sweet and savoury delights. Our signature cocktails inspired by Native Australian ingredients are unparalleled. This role is perfect for someone who thrives moving between two distinct bar environments and takes pride in their mixology skills, product knowledge, and ability to engage with a diverse, ever-changing clientele.

Skills & Experience

• 1 - 2 years of experience working in a similar restaurant, hotel or bar environment.
• Experience making cocktails with a good knowledge of all things beverage related from the classics to more complex and sophisticated.
• Personable, enjoy working in a busy environment and engaging with guests.
• Good communication, a team player and attention to detail.
• Adaptable and the ability to multi-task and anticipate the guests' needs, including early mornings, late nights and shift work to suit airport traffic.
• Enjoy working in a hotel environment and have the flexibility to rotate across Smithy's Bar and Cloud 9 Rooftop Bar, and support other outlets as needed.

Key Responsibilities

• Maintain personal grooming and uphold a clean, safe, and well-stocked work environment in line with hotel standards.
• Deliver exceptional food and beverage service while adhering to all operational, safety, and hygiene procedures.
• Demonstrate strong product knowledge and comply with all preparation and dispensing standards.
• Complete all opening, closing, and cashiering duties accurately and efficiently.
• Participate in all required training sessions to continuously improve service and product knowledge.
• Collaborate effectively with team members and assist other departments as needed to ensure smooth operations.
